Barras de Chocolate e Caramelo / Chocolate and Caramel Bars



Quem adora chocolate vai adorar isto: brownie de chocolate, mousse de caramelo e chocolate e cobertura de chocolate, tudo num só! Quando vi esta combinação surpreendente sabia que tinha de a fazer para alguém... O seu sabor é tão intenso que tem (deve) ser servido em pequenas quantidades, senão corre-se um risco de ficar em chocolate overload...! A experimentar, com precaução, não aconselhado a palatos mais sensíveis...

The ones who love chocolate will love this: brownie, caramel and chocolate mousse and chocolate topping, all in one! When I saw this stunning combination, I knew I had to make it for someone... It's flavour is so intense that it must (should) be served in small quantities, otherwise there is a risk of having a chocolate overload...! Something to try, with precaution, not advised to more sensitive palates...


Base:

  • 170g chocolate negro ... 170grams dark chocolate

  • 85g manteiga ... 85grams butter

  • 75g farinha ... 75grams flour

  • 1/4 c. chá bicarbonato ... 1/4 tsp baking powder

  • 2 ovos ... 2 eggs

  • 145g açúcar ... 145grams sugar

  • 60g nozes em pedaços ... 60grams chopped walnuts

Recheio ... Filling:

  • 95g açúcar ... 95grams sugar

  • 2 c. sopa água ... 2 tbsp water

  • 30g manteiga ... 30grams butter

  • 1 cháv. natas ... 1 cup heavy cream

  • 170g chocolate de leite ... 170g milk chocolate

Cobertura ... Topping:

  • 170g chocolate negro ... 170g dark chocolate

  • 1/2 cháv. natas ... 1/2 cup heavy cream

  • 40g nozes inteiras ... 40grams walnuts

Para a base: Aquecer o forno a 175º. Derreter o chocolate com a manteiga em banho-maria ou no microondas e, quando estiver derretido, mexer até obter uma mistura homogénea e deixar arrefecer. Bater os ovos com o açúcar até obter uma mistura espessa e esbranquiçada. Juntar o chocolate derretido e bater para incorporar. Adicionar o bicarbonato de sódio à farinha, misturar e adicionar à mistura de ovos e chocolate. Bater até estar incorporado, juntar as nozes em pedaços e mexer apenas para as distribuir igualmente pela massa. Deitar numa forma quadrada ou rectangular, previamente forrada de papel vegetal e untada. Cozer durante 30min. Deixar arrefecer um pouco, retirar da forma e deixar arrefecer completamente.

Para o recheio: Colocar 3/4 cháv. de natas numa taça e guardar no congelador para arrefecerem. Derreter o chocolate em banho-maria ou no microondas e reservar. Aqueçer as restantes natas até ficarem bem quentes. Numa panela pequena, juntar o açúcar e a água e aqueçer em lume alto até se formar um caramelo ligeiramente escuro. Retirar do lume e adicionar a manteiga e as natas quentes. Mexer rapidamente até obter um creme homogéneo e deixar arrefecer um pouco. Juntar ao chocolate derretido e misturar para incorporar. Bater as natas frias até ficarem com a consistência de chantilly. Adicionar um pouco das natas a mistura de caramelo e chocolate para esta ficar mais solta e depois incorporar as restantes, de modo a perder o mínimo de volume possível. Espalhar esta mousse sobre a base e levar ao frigorífico para solidificar.

Para a cobertura: Partir o chocolate em pedaços pequenos e colocar numa taça. Aqueçer as natas até estas estarem muito quentes e deitá-las sobre o chocolate. Esperar um pouco e depois misturar levemente até obter uma mistura homogénea. Deixar arrefecer até ficar à temperatura ambiente e depois espalhar sobre a mousse, alisando a superficie. Recolocar no frigorífico até ficar firme e cortar em quadrados ou ractângulos, conforme desejado. Decorar com meias-nozes ou quartos de nozes.

For the base: Preheat oven to 175°. Melt the chocolate and butter in the microwave or in a bowl set over a pot of simmering water, stir until smooth and let cool. Meanwhile, beat the eggs with the sugar until you have a thick, pale mixture. Add the melted chocolate and beat until incorporated. Add the baking soda to the flour, mix and add to the eggs and chocolate mixture. Beat until just incorporated and fold in the walnuts, distributing them evenly. Pour the batter into a square or rectangular baking pan, previously lined with parchment paper and buttered. Bake for about 30 minutes. Let cool slightly, remove from the pan, and let cool completely.

For the filling: Put 3/4 cup of cream in a bowl and place it in the freezer to chill. Melt the chocolate in the microwave or in a bowl set over a pot of simmering water and reserve. Heat the remaining cream until very hot. In a small saucepan, mix the sugar and the water and heat them over high heat until you have a slightly dark caramel. Take the pan off the heat and add the butter and the hot cream. Stir until smooth and let cool slightly. When cooled, add to the melted chocolate and stir to incorporate. Whip the reserved cold cream to soft peaks. Add a few tablespoons of whipped cream to the chocolate and caramel misture to loosen it up and then gently incorporate the remaining, in order to have a minimal volume loss. Spread the mousse over the base and refrigerate until set.

For the topping: Chop the chocolate into small pieces and place them in a bowl. Heat the cream until very hot and pour it over the chopped chocolate. Let sit a little bit and then stir slightly, until smooth. Let cool to room temperature and spread over the mousse, smoothing the surface. Place in the fridge until firm and cut into squares or rectangules, as desired. Decorate with walnut halfs or quarters.
